Crazy Easy Berry Galette

I made this because I had some berries in their last stages of life, and a pie crust in the freezer that I didn’t use for Pi day (I bought a pie instead – just couldn’t find the energy to make something for 8th graders who would prefer store-bought anyway!).

INGREDIENTS

  • 1 cup strawberries, quartered

  • 1 cup blackberries

  • 1 teaspoon of sugar

  • a squeeze of lemon juice

  • 1 frozen pie crust, thawed

  • 1 egg


INSTRUCTIONS

  1. Preheat oven to 375 degrees. Line a baking sheet with parchment paper.

  2. In medium bowl, mix strawberries, blackberries, sugar, and lemon juice. Set aside while you prepare the crust.

  3. Remove pie crust carefully from packaging. Gently form into a ball and place on a clean, smooth surface. Roll out with a rolling pin to about a 10-inch diameter. Transfer to the baking sheet with parchment paper.  Spread the berries into the middle of the crust, taking care to leave a two-inch border.

  4. Fold the crust up around the edges.

  5. Whisk the egg in a small bowl and brush the edges of the crust with the egg wash. Sprinkle with sugar.

  6. Bake for 20 minutes or until crust is golden brown. Let it cool a minute, then put it on the table with forks.
