Avocado & Tomato Salad

This is my absolute favorite summer salad. It reminds me of my grandmother who always made extra corn on the cob so she could use it in salads the next day!

 

Time to cook 7 minutes | makes 4 servings

Ingredients

  • 1 whole ripe avocado, sliced or cubed

  • 1/2 pint cherry tomatoes, quartered

  • 1 ear fresh corn on the cob

  • 2 tbsp. olive oil

  • 1/2 juice from fresh lime

  • kosher salt to taste

  • freshly ground pepper to taste

INSTRUCTIONS

  1. Cut the corn off of the cob.

  2. Heat 1 tsp. of the olive oil in a sauté pan over medium-high heat. Add the corn and cook, stirring frequently, until the corn is golden brown.

  3. Stir corn, avocado, and tomatoes together. Drizzle with the remaining olive oil, lime juice, and salt and pepper to taste.
