Refreshing Green Smoothie
While my preferred method of consuming veggies is eating them, at times, a crisp, refreshing smoothie hits the spot in ways that celery stalks cannot.
My go-to ingredients are things I usually have on hand – a crisp green apple, a stalk or two of celery, and parsley from my herb garden. I also enjoy ginger and keep a few baggies of sliced or grated ginger in my freezer and it lasts for months! Lemon juice brings it all together.
This is my basic recipe – adjust as you like!
INGREDIENTS
1 small granny smith apple, sliced
½ bunch flat-leaf parsley
2 stalks celery, chopped
1-2 teaspoons minced ginger
A handful of ice cubes
Juice from half a lemon
INSTRUCTIONS
Pulse the apple, parsley, celery, and ginger in a high-speed blender until coarse and fairly well mixed. Add ice cubes and blend on high speed until desired smoothness. Add lemon juice and blend a few seconds.
Taste and adjust to suit your taste. Feel free to add a dash of sweetness – like honey or agave – if it needs it.
