Ginger Lime Refresher

I’ll be totally honest. This ginger lime refresher was inspired by a delicious boozy cocktail that I had while on vacation. I shamelessly pestered the waiter for the recipe until he divulged the drink’s secret ingredient - ginger simple syrup! I was enchanted and thought it might make, among other things, a delicious summer drink.

And guess what? I was right!

Serves 2

Ingredients

  • 1 2-inch knob of ginger, thinly sliced (no need to peel)

  • ½ cup of sugar

  • 2 cups of water

  • ½ cup of freshly squeezed lime juice (that might equal to 6 limes)

Instructions

  1. Place ginger, sugar, and water in a heavy-bottomed saucepan and bring to a gentle boil, stirring frequently, until sugar is completely dissolved. Simmer for about 10 minutes so the ginger flavor gets incorporated into the syrup. Let cool. Remove and discard the ginger slices.

  2. Stir in lime juice and pour into tall glasses filled with ice cubes. Garnish with lime slices.

  3. If you want to make it into a cocktail, feel free to add an ounce of your favorite vodka or gin!
