Almond Blueberry Waffles

Homemade almond blueberry waffles

This is such a great alternative to frozen waffles. They are full of great ingredients and absolutely delicious!

Time to cook 30 minutes | makes 6 servings | Equipment: waffle iron

INGREDIENTS

  • 3/4 cup oat flour

  • 3/4 cup almond flour

  • 1 cup all-purpose flour

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1 teaspoon cinnamon

  • 1 1/2 cups buttermilk

  • 2 eggs

  • 5 teaspoons melted butter, cooled

  • 1 tsp. vanilla extract

  • 1 pint fresh blueberries

INSTRUCTIONS

  1. Preheat waffle iron.

  2. Sift together dry ingredients – set aside.

  3. Whisk wet ingredients together. Slowly stir in the dry ingredients and stir until just blended. The mixture may be lumpy.

  4. Ladel the batter into the waffle iron and sprinkle with blueberries. Cook until browned on both sides.

NOTES

  • Maple syrup is optional — these waffles are great straight-up!
