Thanksgiving Kale Salad
INGREDIENTS
Dressing:
¼ cup blood orange olive oil
2 tablespoons white balsamic vinegar
1 tablespoon diced shallot
½ teaspoon dijon mustard
Salt and pepper to taste
Additional Ingredients:
4 cups shredded kale
1 diced apple (Fuji works well)
¼ cup dried cranberries
¼ cup walnuts
Instructions
Mix all dressing ingredients in a glass jar with a tight-fitting lid.
Toss the kale, apple slices, dried cranberries, and walnuts into a salad bowl, and drizzle with the desired amount of dressing.
