Thanksgiving Kale Salad

INGREDIENTS

Dressing: 

  • ¼ cup blood orange olive oil

  • 2 tablespoons white balsamic vinegar

  • 1 tablespoon diced shallot

  • ½ teaspoon dijon mustard

  • Salt and pepper to taste 

Additional Ingredients: 

  • 4 cups shredded kale

  • 1 diced apple (Fuji works well)

  • ¼ cup dried cranberries

  • ¼ cup walnuts

Instructions

  1. Mix all dressing ingredients in a glass jar with a tight-fitting lid.

  2. Toss the kale, apple slices, dried cranberries, and walnuts into a salad bowl, and drizzle with the desired amount of dressing.
