Veggie Stir Fry with Super 6 Sauce

A weekly staple in our house!

Time to cook 10 minutes | makes 4 servings

Ingredient

  • 1 zucchini, sliced into matchsticks

  • 2 carrots, sliced into matchsticks

  • 1 white onion, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 1 tbsp. sesame oil or grapeseed oil

  • 1 bunch scallions, divided

  • 1 tbsp. minced or grated ginger, divided

  • 4 cloves minced garlic, divided

  • 3 tbsp. mirin (or rice wine vinegar)

  • 1/4 cup reduced-sodium soy sauce

  • 1 tsp. (or more, to taste) Sambal / Siracha

  • 1 cup, cooked brown rice

Instructions

  1. Have all of the vegetables prepped and ready to go near the wok or large sauté pan.

  2. Take ½ of the garlic, ginger and scallions and mix with mirin, soy, and siracha. Taste and adjust to your liking! If you like it more spicy, add more siracha. Set aside the sauce (known as Super 6 Sauce in our family!).

  3. Heat wok and add oil. When hot, add vegetables and the remaining ginger, garlic, and scallions. Cook quickly – stir frequently. You may need to cook in batches.

  4. Serve over brown rice with Super 6 Sauce.
